This is the best split pea soup I've had. It's also easy to make and cheap.

Split Pea Soup
from the Taste of Home Cookbook
1 small onion, diced
1 T oil
4 cups water
1 can (14.5 oz) or about two cups chicken broth
1.5 cups split peas, rinsed
1 cup cubed cooked ham
3 bay leaves
1.5 t salt
1/2 t dried rosemary
1/4 t dried thyme
1/4 t pepper
Saute onion in large saucepan until tender. Add the rest of the ingredients, bring to a boil, then lower heat, cover, and simmer 45 minutes to an hour until peas are tender. Discard bay leaves before serving.
How appropriate. I have split pea soup on the menu for next week since we are having ham on Sunday. This will be the first time I have ever cooked a ham, but what I'm most excited about are the leftovers.

ReplyDeleteThis makes me sad, because we just had ham a couple Sundays ago and I was struggling with how to use the leftovers in a way I really wanted. I really want this.
